In case you are wondering, the answer is YES! You can have cookies for breakfast without any guilt!

These cookies are the easiest things to make and they contain all the good stuff you need to start your day; fiber, protein, healthy grains, Omega 3s, etc. The best part is that you really don’t need a recipe. The base of this cookie dough starts with over-ripe bananas. After that, you just start adding in oats and any healthy fillers you can dream up. This is where you can pack in the Omega 3s if that’s what you need, or the protein, if you are trying to put on some muscle. Just keep adding oats and filler until the dough resembles regular cookie dough. To be safe, I also add in salt, baking soda, and vanilla, because I feel that all good cookie recipes have these things.

Some possible fillers are:

  • protein powder
  • chia seeds
  • ground flax meal
  • dried fruits
  • peanut flour
  • chocolate chips
  • collagen powder
  • chopped nuts
  • coconut
  • cocoa
  • spices like cinnamon, nutmeg, ginger, etc.

Let me know if you try these and what fillers you used. There are a lot of possibilities with these cookies. The recipe below is just one example of how they can be made.

By the way, these cookies aren’t necessarily pretty! You need AP flour and pure butter to get cookies to look like Martha Stewart just stepped foot in your kitchen. But if you are trying to eat clean and you have a hankering for cookies, these fit the bill perfectly.

Breakfast Cookies

gluten-free, dairy-free cookies that are healthy enough for breakfast, lunch or dinner!

Servings 3 dozen (approximately)

Equipment

  • Food Processor
  • Cookie Sheet
  • Oven

Ingredients
  

  • 4 Over-ripe bananas The size of the bananas will determine how much filler you need to add to get to a cookie dough consistency
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp vanilla
  • 1/2 cup chia seeds
  • 1/2 cup flax meal
  • 1 scoop protein powder
  • 1/2 cup chocolate chips
  • 1/2 cup dried cranberries
  • 1 1/2 cups gluten-free oats you may need more or less to get to a cookie dough consistency

Instructions
 

  • Preheat oven to 350 degrees F
  • Place bananas in a food processor and process until smooth.
  • Add salt, baking soda, and vanilla and process for a few seconds till combined.
  • Add in remaining ingredients and process until just combined. If it is too runny, add in more oats. Don't over process or your cookies will look grayish!
  • Use a cookie scoop or spoon and drop on a cookie sheet that has been lined with parchment, silpat, or sprayed with cooking spray.
  • Be sure to flatten these cookies with a spoon. They will not spread so you need to flatten them prior to baking.
  • Bake at 350 for 15 minutes or until golden on the edges. Enjoy!
  • I use a small scoop so I am able to make about 40 cookies.
